Chocolate Butterscotch Squares

If you absolutely adore chocolate, then these bars will make you very happy. They're very very rich and sweet, so a small square goes a long way but they are decadently delicious.  Just so you're prepared, this is a three part recipe so you need to make sure you've plenty of time on your hands - it's not something you can throw together in twenty minutes flat.

Chocolate Butterscotch Bars

Base
150g Plain Chocolate, melted
225g plain flour
1/2 tsp baking powder
120g butter, at room temperature
50g dark brown sugar
30g Ground Almonds

Butterscotch Middle
175g Butter
115g Caster Sugar
30ml Golden Syrup (2 tbsp)
175ml Condensed Milk
150g toasted Hazelnuts (use either whole or chopped)

Top
225g Chocolate (milk or plain, whatever you like), melted

Preheat the oven to 160/325/Gas 4.  Grease & line a 30 x 20cm pan.

Melt the chocolate & let it cool for 10 mins.  Mix the flour, baking powder & butter together (food processor handiest) until it looks like breadcrumbs.   Add the sugar, chocolate & almonds and pulse until it forms a dough.

Press into the tin, level out & bake for 25 mins.  Allow to cool.

Heat all the butterscotch ingredients in a large pot & simmer until dark brown - keep stirring or it will burn.

Add the hazelnuts, mix & pour over the base.  Allow to cool.

Pour the melted chocolate over the butterscotch & allow to set before cutting into little squares

  2. Aoife, I am so excited about these. Unlike you however, I will not be bringing them into the office, far to greedy :-)

    1. George, they're really sweet but that didn't stop Miss Jenny (the commenter above you) eating more than her fair share...
