Dinner in 10 : Fusilli with Salmon and Peas

Tonight I was tired to the core.  I had physio on dodgy arm on Monday evening and I am black and blue - it's ok Lisa, I know you didn't mean to hurt me... much.  If there had been bread in the house, I would have settled for toast and jam for dinner.  But there was no bread - what's a lazy sod like me going to do with a hungry husband to feed?  Last night I went on a little road trip with Little Sis and the fluffy dog.  Her Hoover had broken (again - how much cleaning can one person do???) so we needed to visit The Hubs in work to get a new one.  Next door to him is a German supermarket so Sis dragged me in to get a few bits.  Twenty minutes later she was still faffing around so I decided to get a few bits for myself.  And those little bits made a dinner in 10 minutes tonight.  Excellent planning, wha?




To make this ultra quick dinner for two, you'll need a large pot, a colander, a tablespoon and a kettle of boiling water.  Ready?  Then we shall begin...

Fusilli with Salmon, Peas and Creme Fraiche

1 tbsp Salt
200g fresh Fusilli pasta (half of a pack)
100g frozen Peas
125g pack Hot Smoked Salmon
2 large tbsp Creme Fraiche
1 tbsp Chives, snipped
1 tbsp Parsley, finely chopped
Black Pepper (freshly ground if you can)

Fill your large pot with the contents of the kettle and add the salt.  Put onto a medium heat until it comes to the boil.

Add the fusilli and peas to the pot and cook for 6 minutes on a medium heat.

Open the salmon, remove the skin and flake the salmon into pieces with your fingers.  Give your hands a bit of a wash now.

Once the 6 minutes are up, drain the pasta and peas into a colander.  Save a tablespoon of the cooking water in the pot - this forms the base of your sauce.

Add the Creme Fraiche to the pot and stir well so it combines with the water to create a smooth sauce.  Stir in the flaked salmon, chives, parsley & black pepper. Return the pasta and peas to the pot and give it a good stir.

Bowls or plates, the choice is yours.  Dinner is ready!
