Summer Muffins

A while back, I hijacked Gee Gee's recipe for banana muffins and turned them into apple muffins.  This week, I made muffins that contained the best of both, and a little bit more.  I'm not going to post the recipe again, just tell you what changes I made this time around:




1.  I used Connaught Gold Low Fat butter - if you're in WW, this means half the points with no difference in taste

2.  I decided to try a can of Hartley's Apple Pie filling - just for the sheer hell of it and also to see if it would work as an emergency storecupboard standby ingredient should we ever get snowed in again (please god... no!).  As this is very sweet, I left out the sugar from the original recipe.

3.  I had frozen Blackberries languishing in the back of the freezer in need of a home.

This meant that the original 4 bananas were replaced by 1 banana, 1 can of apple and a large handful of blackberries.  It worked... have a look at the photos below to see the proof!
