Christmas Dinner Potato Cakes

If your house is anything like mine, you've a fridge full of leftovers from Christmas Dinner and they gaze balefully at you every time you open the fridge door.  And you don't know what to do with them apart from make sandwiches or curry.  I have a suggestion : Christmas Dinner Potato Cakes.  I know it sounds a little bit strange but nearly all of your leftovers can be used here to create a delicious meal.  Just add a crisp green salad or reheated red cabbage and you've created something simple but incredibly tasty with a crisp buttery crust.  Don't forget a healthy dollop of cranberry sauce on the side...




Christmas Dinner Potato Cakes

200g Mashed Potato
100g Vegetables, crushed (sweet potato, carrot, parsnips, onion)
50g Stuffing, chopped into small dice
50g Bread Sauce
75g Turkey, roughly shredded
75g Ham, roughly shredded
3 Spring Onions, finely sliced
1 tbsp each fresh Parsley & Chives
Salt & Pepper
25g Butter

In a large bowl, mix everything but the butter together and form into 4 large or 6 medium patties, about 2cm thick.

Heat a large frying pan on a medium heat and add half the butter to the pan, Carefully place the potato cakes on the pan and cook for about 5 minutes.  Add the rest of the butter to the pan, carefully flip the potato cakes and fry for a further 5 minutes.  Remove from the pan very carefully and serve with a crisp salad or some leftover red cabbage.  A dollop of cranberry sauce or some gravy is the perfect accompaniment.
