Apple Salted Caramel Blondies

Yes, it's another one of my freezer finds.  Last summer, my parents gave me a huge bucket of apples from the trees in their back garden, some of which went into my Hit The Floor cake and I decided to make puree from the remainder which I put into ziplock bags and into the freezer to be used at a later stage.  It's actually getting rather ridiculous because there's apple puree, pear puree, frozen cherries and raspberries, all waiting to make a star appearance in a cake.  We haven't been to France for almost two years so I'm at almost at the very end of my stash of fleur du sel caramel.  I sacrificed some of it for this decadent dessert and it was worth it.  A blondie is a chocolate-less brownie where the gooeyness comes from melted butter and dark brown sugar for lovely toffee flavours.



This bake made it into the dayjob, despite the protests of The Hubs, and the poor box of blondies didn't stand a chance against the hungry hordes.  Some people came back for seconds (and even thirds, Alan...) and now they're expecting me to start baking again every weekend, just for them. Good luck with that!

Apple Salted Caramel Blondies

120g Butter, melted
240g Dark Brown Sugar
1 Egg
1 tbsp Vanilla Extract
100ml Apple Sauce
125g Plain Flour
2 tbsp Salted Caramel

Melt your butter gently in a pot and allow to cool.

Preheat your oven to 180c/Gas Mark 4.  Line a 20cm square tin with baking parchment.

In your food mixer or in a large bowl, beat the melted butter and sugar together until well mixed. Add the egg, vanilla & apple sauce and mix together.  Now stir in the flour.


Pour into the prepared baking tin and drizzle the salted caramel over the top.  Use a skewer to marble the caramel over the cake if it's not runny enough.


Bake for 20-25 minutes until they're set in the middle.  Remove the tin from the oven & allow to cool for 10 minutes before lifting out the blondies, still in the paper and transferring to a wire rack to cool completely.

Cut into squares and serve.  The size of the squares is dependent on your greed!

  2. This is great, I love dessert. This looks so delicious and even better, it is so simple to make. I always enjoy chocolate brownie. But apple flavor... I really have to try this. :)
