Buttery Balsamic BBQ Asparagus

Home, home from the holidays and my word, I'm depressed.  The visa bill has already landed, leading to many "holy crap, what did I buy there" moments and to top it all, I'm absolutely and utterly crippled with sciatica.  Damn you, substandard apartment mattress.  Oh well, nothing that a cocktail of drugs and an MRI scan won't cure (hopefully).  Tonight I was feeling a little more mobile than in recent days so I decided to break out the BBQ and cook up some dinner.  Ribeye steak was the dish du jour, together with some delicious new potatoes.  But the part I was looking forward to most was a giant pile of green asparagus, anointed with butter and balsamic vinegar, cooking away alongside the steak.



Call me greedy, but I use a bunch of asparagus per person because I love it so. Actually, I'd probably eat two if nobody was looking.  This is a ferociously easy recipe to make, and if it's not BBQ weather, just throw it into the oven for 15 minutes at 200c/Gas Mark 6.

Buttery Balsamic BBQ Asparagus

1 bunch of Asparagus per person
30g Butter, in small pieces
1 tbsp Balsamic Vinegar
Salt & Pepper

Use a large sheet of tinfoil to make a long rectangular tray and turn the edges up to make sure no juices escape.

Trim the asparagus and lay flat on the foil tray.

Scatter the butter over the asparagus, drizzle with the balsamic vinegar and season with the salt and pepper.

Place on the BBQ on a medium heat, put the lid down and cook for 15 minutes. Serve immediately

    I'll now be having this alongside my halloumi & courgette skewers. There'll be no room left for his steak if I've anything to do with it ;)
